Human beings realized that they could not go that far alone, and that teamwork gives better results, so much so that the Andean aborigines created the word “minka” to give meaning to the noble activity of the community work with benefits for all participants.
That is why our brand is called Minka, because it is what we literally do a "minga" around cocoa.
Our work team together with dozens of cocoa producers in various regions of Ecuador, join forces to once the grain is harvested, together to watch over the cradle where the cocoa beans are fermented, during a two or three day nap, so that once they wake up, take them by the hand to the tendales, so that they receive sunbaths, with which their character is forged, and then refresh them with the cool mountain breezes, which give them the affable character and balance the impetus of its colorful flavor, until it is at the exact point to melt into fine chocolate.
I am a real chocolate fan and this chocolate is marvelous! It makes all other chocolates too sweet and unsatisfactory. It makes indulging more fun as it is just chocolate with no sugar!!!!
I still need to get the hang of tempering but the chocolate tastes amazing, melts well and arrived in the heat unmelted in spite of the package being left in the wrong spot by the driver. I can recommend the dark chocolate with confidence.
Excellent rich tasting cocoa! This was my first time ordering Minka cocoa and their unsweetened chocolate chips. Both are amazing and I will order again. I highly recommend. Only problem or concern is that once you try this chocolate you might not be able to go back to store bought brands.
